
Sun Dried Tomato Pesto Penne Pasta

1. Boil penne pasta noodles – 1 package
2. Into the food processor:
- Fresh basil leaves -pull off the main stem portions (fill up the processor loosely or about 1 cup of basil)
- 1 can (8oz) of sun dried tomatoes in olive oil
- 1 handful of pine nuts
- ½ cup of shredded parmesan cheese
- garlic cloves to taste (1 to 2)
- drizzle olive oil while the processor is running
3. Mix cooked pasta with the pesto mixture (leave just a little pasta water)
4. Mix in 1 handful of pine nuts and ½ cup of shredded parmesan cheese
